I think you'd have to get very, very lucky to make the 3 pm ferry. It can easily take 15 minutes or more to get off the plane once it lands, so you're going to lose time just getting off the plane and making the walk to the taxi area. Their website states that if you want to use your own car insurance, you must have a letter on your insurance company's letterhead stating that your insurance is valid in the USVI, otherwise you have to pay $15 per day. We've been going to STJ since 2003 and never had to have a letter before, though...

I got my celiac diagnosis was almost 9 years ago so I have many STJ trips under my belt since having to go GF, and the only place I've successfully eaten GF on the Coral Bay side was Tourist Trap, which is now closed.
