Made a crock pot full of cowboy beans with green peppers onions cubede round steak, ham hocks and cheriso sausage on sunday.

This week:
Spaghetti squash with chicken and brocolli with a white cream sauce.
Penne whole wheat pasta with homemade pesto, portabella mushrooms and cherry tomatoes
Shrimp sauteed in olive oil with finely chopped walnuts served with asparagus and brown rice.
Stuffed zuchini with chicken, scallions, peppers and whatever other vegies we have left.
Saturday: Billy's Bronco Chili! with cornbread
This week:

The shrimp with feta sounds like the Ina Garten recipe I made Monday night. It was very good.liamsaunt wrote:

It was the Ina recipe. I agree, it was very good. I made the whote wine-pepper flakes one last week, which also an Ina recipe and that was very good also. I could not get my shrimp to stand, tails up. Oh well...clearly I'm no Ina!

I am attempting to make some lightened up comfort food this week so my menu planning took longer than normal since I could not find any good recipes that I liked

Monday Salmon with pineapple salsa glaze, broccoli with lemon garlic sauce, rabe filled ravioli
Tuesday Crock pot chicken stew
Wednesday escarole with beans and chicken sausage, crusty rolls
Thursday sole or flounder florentine with sweet potato fries
Friday soup of some kind for my husband (I'm out for the night)
Saturday out for dinner

This is a clean out the fridge kind of week at my house.
Monday: sandwiches made with leftovers from the weekend--chopped pork ribs in bbq sauce for John, and grilled chicken, carmelized onion, and avocado for me.
Tuesday: pasta with roasted spaghetti squash and marinara sauce, arugula salad
Wednesday: wedge BLT salad with panko crusted chicken (recipe in this month's Cooking Light magazine)
Thursday: huevos rancheros with pinto beans and tortillas
Friday: miso crusted fish with green tea rice (recipe from the current Fine Cooking magazine)

As usual, too much delivery this week, but here are the handful of meals I did make:
Spaghetti Carbonara for Matt, spaghetti with a green olive & chunky tomato sauce for me (loved the olive tomato sauce -- a very impromptu/lazy recipe that worked out really well! Three ingredients: a couple of spoonfuls of TraderJoe's green olive tapenade, a 14oz can of TJ's no-salt-added diced tomatoes, and a cube of frozen crushed garlic. Heat & serve on the pasta of your choice, with parmesan to taste. so fast and really satisfying, considering the lack of effort)
Cod Chowder with corn & potatoes
Chicken divan (throwback to my childhood -- one of my mom's go-to casseroles)
Baked crab cakes (I used my usual crab cake recipe, but I tried baking instead of frying, and I was so happy with the results -- much less work and mess!) I brushed the top of the cakes with a bit of melted butter to help them brown.

I got all of the Caneel menus from the hotel concierge in my inbox today, so here is the current Sugar Mill menu (sorry I don't know how to attach it so this is copy/paste). Also, I realized a bad flaw in my reservations in that I forgot La Tapa!
