This week in some order will be:
Tuna Noodle Casserole and roasted butternut squash
Hamburgers with Havarti and caramelized onions
Pot Roast with Rutabaga and Mashed Potatoes and fresh cauliflower with cheese sauce
Turkey and Green Bean Casserole
Vegetarian Chili and cornbread
Lasagna Roll Ups (stuffed with roasted red peppers and spinach)

X - we started camper camping a few years ago. We couldn't lie on the ground for more than a night. We camp most weekends during the season.

PA girl, I'm going to give those a try sometime soon. I don't know if my boys with their 4 year old palates will like them, but we'll try it :)

Potato dumplins with pork roast and saurkrut then for left overs slice them and pan fry them till there golden brown and put the rest over them. I'm drooling now thinking back to my youth . With a last name of Landwehr I guess I'm German

Made a trip to Cleveland's West Side Market this weekend, and bought a bunch of good stuff!
Today we had gyros and potatoes roasted with greek seasoning
later this week, we're having;
Porcupine meatballs and kale/parsnips
Chicken wing sandwiches
Roast beef and potato dumplings
Potato fritters with bacon and cheese
Chicken spaghetti
Bacon lettuce and tomato sandwiches made with this SUPER thick cut bacon I get from West Side Market in Cleveland. We call this bacon bacon STEAKS.

I don't know if this chicken spaghetti recipe came from here, but I made it tonight, and it's a warm, satisfying dish. I skimped a bit on the cayenne cause I wasn't sure, but would go ahead and give her the full dose, next time:

In no particular order, except for tonight which is CBGR marinated steak tips with broc. and twice baked potatoes

Spaghetti squash with ground chicken bolognese
Lazy stuffed cabbage with ground chicken and brown rice
Baked chicken breasts with "lite" creamed spinach sauce and salad
Whatever fish is fresh the day I head to the fish market

Saturday: grilled turbot and broiled nantucket bay scallops with herbed risotto, baked winter squash, and broccolini

Sunday: grilled cornell chicken with stuffed mushrooms (recipe in the current Fine Cooking magazine, they are very good), gratin dauphinoise, roasted carrots

Monday: pan-roasted shrimp. I am trying to decide between two recpies. Both have fennel. One also has lemon, oregano, tomatoes, and feta. The other has white wine and red pepper flakes. I'll decide when I get home. Crusty bread to sop up the pan juices.

Tuesday: orechiette with sauteed mixed greens, chicken sausage, garlic, and tomatoes, with an arugula salad.

Wednesday: macomber turnip soup, scallop fritters

Thursday: whatever fish is in my CSA box.
It's like looking in your soup and finding a whole different alphabet.

Monday: Bean and Ham soup
Tuesday: Curried Chicken soup
Wednesday: I have a meeting so Chip will have leftovers
Thursay: Pan seared scallops with Garlic scape pesto and roasted cauliflower

Make chicken tetrazini using the spaghetti squash. I've never done it, but it sound good to me.

CHICKEN TETRAZZINI WITH SPAGHETTI SQUASH

1 spaghetti squash (about 3 lb.)
1 tbsp. unsalted butter
1 med. size yellow onion, chopped fine
1/8 tsp. black pepper
3 tbsp. flour
1 med. size stalk of celery, sliced thin
2 c. low sodium chicken broth
1 c. skim milk
2 tbsp. sour cream
1 bay leaf
2 tbsp. minced parsley
1 tbsp. lemon juice
2 c. cubed cooked chicken or turkey meat
2 tbsp. fine dry bread crumbs

Preheat oven to 350 degrees. Slash squash in several places with a small knife. Place squash on an ungreased baking dish. Bake 1 hour or until it can be pierced easily with a fork. Cool for 15 minutes.
Meanwhile, in a heavy saucepan, melt butter over moderate heat, add the onion, celery and pepper, cook until onion is soft, about 5 minutes. Slowly add flour to vegetables, stir, add chicken broth, milk, and bay leaf. Cook about 20 minutes, stirring occasionally. Discard bay leaf, stir in sour cream, parsley and lemon juice. Remove from heat.

Halve spaghetti squash, remove seeds. Scrape the flesh into ungreased 1 1/2 quart casserole, smoothing into an even layer. Cover with chicken, then the sauce, top with bread crumbs. Bake uncovered for 30 minutes or until bubbly. Serve with green beans and cherry tomatoes. Serves 4.

I like spaghetti squash with just butter and grated cheese. Chicken done with some CBRG?

We were gifted an Omaha Steak box for Christmas so I will work through those little vac packs this week.

I hope to get better at planning in the new year. Although, eating healthy has stayed in tact, lots of chicken and hard boiled eggs is getting old :(

I will jump back in:
Monday: spicy stir fried tofu and bok choy with red bell peppers over brown rice
Tuesday: omelette, arugula salad and baguette
Wednesday: spicy chicken and broccoli udon noodle bowl
Thursday: hoisin glazed salmon with sesame green beans
Friday: probably takeout Indian food
It's like looking in your soup and finding a whole different alphabet.
