Here's a couple of drinks that I found in a magazine:

Cucumber Mojito

5 slices seedless cucumber, peeled
6 to 8 mint leaves
1/2 lime, cut into wedges
1 packet Equal
1 1/2 oz light rum
Chilled ginger ale

In a tall glass, muddle together 4 slices cucumber, lime wedges, mint, and sweetener. Add to a cocktail shaker filled with ice. Add rum and shake. Pour back into glass and top with ginger ale. Garnish with remaining cucumber slice.
(I'm not a big fan of artificial sweetner, but I'm sure you could substitute some simple syrup.)

Bikini Martini

1 oz coconut rum
3/4 oz vodka
1 oz pineapple juice
1 splash grenadine syrup
Orange wheel for garnish

Half-fill a cocktail shaker with ice and add rum, vodka, and pineapple juice. Shake until frothy. Pour in a chilled martini glass. Add grenadine in the middle. Garnish with orange wheel.

Charlie just grilled a flank steak in the pouring rain! that looks good. I have those glasses too - crate and barrel!

I confess.

I saw the glasses in one of your photos - hmmm, I like those. Soon after I saw them in the Crate and Barrel catalog, so off to the mall I went :)

Today in honor of our anniversary, I invented a new drink! I'm currently calling it a "St. John Sunrise," but after seeing the sunset pix from the Beach Bar tonight, maybe "Cruz Bay Sunset" might be a more appropriate name. :)

St. John Sunrise
1 shot dark rum (I used Old New Orleans Cajun Spice)
1 shot Cruzan Coconut Rum
Dole Orange/Peach/Mango juice
Grenadine

Fill an apx. 10 - 12 oz. glass 1/2 way with ice
Pour in rums
Fill glass about 3/4" from the top with juice
Pour in grenadine till it hits the bottom & starts back up again

Yummmmm!!

This weekend we made a drink from the book "A Trip To The Beach". It's called a Banana Cabana and I don't even want to think about how many calories it has, but it goes down reaal smooooooth! :D

Banana Cabana

To make two banana cabanas, put 1/2 cup Coco Lopez into a blender. Add 1/2 cup Baileys Irish Cream, 2 ripe bananas, 2 cups ice cubes, and if you like, 2 oz. white rum. (it’s also great without the rum). Blend on high speed until smooth and creamy.


I'm thinking of adding a dash of chocolate syrup in the next batch! :wink:
