One of the neat things about living here in Italy (if you are into it) is that you can get all kinds of game. The different types of birds you can find here in any season can make your head spin - and they all have specific uses and recipes, etc. This spring with some friends we actually ate what amounted to sparrows! Pinto Beans
Does anyone have a good pinto bean recipe? I've soaked the beans for a day and am ready to cook away.
My husband thinks it's healthy so he bought a 30 lb bag of raw beans at Sams!!!!! OMG!

This recipe is for red beans, but I think it would work just fine with pinto beans -- and it's SO GOOD. *sigh*

Not healthy, but I made this recipe recently with cooked pinto beans and it was tasty! I omitted the green bell pepper and the liquid smoke. Oh, and I didn't simmer them on the stove, I cooked them on the grill in a foil pan for about 45 minutes. I think they could have gone for even longer--a full hour for sure.

You could also make refried beans with them. Or for a fast and delicious dip, puree the cooked beans in a food processor with some roasted garlic, olive oil, and chopped rosemary plus salt and pepper to taste. This is really good with grilled bread.

What are your ideas for fast, simple and crowd pleasing meals when it is hot? I am starting to plan menus for my upcoming trip, and the house we rented is south facing without AC in the kitchen/great room (it seemed like a good idea at the time!). I want to think of things that will limit my time in the hot kitchen and are also basic/customizable enough that I won't have to make multiple meals for the group. So far I have come up with build your own salad with grilled protein, grilled pizza margharita, grilled burgers/hot dogs, and grilled customizable quesadillas.

Here is the dessert I made for the 4th of July: griddled pound cake with vanilla ice cream, raspberries and caramel sauce. I made the cake and sauce (not the ice cream though!) but you could probably just use store bought and it would still be good:

No photos, but I'm far out on Martha's Vineyard, waiting for my daughter and brother to bring back lobster rolls from The Galley in Menemsha.
I've realized what I don't like about lobster rolls, in general, and what I DO like about The Galley's.
The roll is toasted, spread with mayo, lined with lettuce, then fresh lobster pieces are piled on top. The lobster meat is not dressed. It tastes only of the sea.
So when you bite into the whole roll, you get the mayo, grilled bun, briney lobster flavor, in perfect flavor harmony. Very good !!

Yes, the Market Basket $3.99 lobster is a great deal. We have had it four times in 2 weeks. Too delicious, and too good of a price to pass up. But we just add butter and corn (boiled in the lobster broth for added flavor).
Just a random St. john food fact:
If you brown some lean sausage and add it to the St. John Spice Salsa Picante Dip recipe (on the back of the package), prior to cooking (I even broil for a minute at the end to get the cheese good and crisp), it is extra amazing an becomes a meal instead of an appetizer. Just a little tidbit we discovered today... I'd imagine shredded chicken would work well too. We are nearly out of dip packs, so clearly it is time for a trip back!

Nutella Cheese Danish
I just made this and it's really easy and really good!! I'm putting a link to the recipe below, but when it comes to the topping, don't try to melt the Nutella, believe me when I tell you that Nutella doesn't melt! After much time spent trying different methods, I ended up melting chocolate chips and smearing them on the top.
