You can make the spread in advance and reheat it (if you are doing warm), but don't put it on the bread until close when you are ready to serve or they'll get soggy.

I think I would make it the morning of the dinner...if you make it the night before there is a chance the garlic will get really strong. Personally that would not bother me or my family, but some people are really sensitive to garlic...
It's like looking in your soup and finding a whole different alphabet.
