Does anyone cook/prep for the week?

If I'm cooking on the weekend, I'll make extra. It's rare that we eat anything made from scratch during the week. By the time we get home after work and the gym, it's too late (and I'm too tired) to start cooking.

I made a roast this weekend. There's enough leftovers for dinner one night and a sandwich or 2 for lunch. I also roasted a chicken for dinner Sunday and made a RR casserole with the leftovers - we had part of that for dinner tonight.

I also baked another pan of oatmeal for my breakfasts.

This was an ambitious weekend for me :D

There's always a pile of Lean Cuisines in the freezer and popcorn in the cupboard. Although I snagged Don with my cooking (how could he not love me after having my Fettucine Alfredo), I reset expectations once the ring was on the finger :lol: :lol: :lol: (he doesn't read here either)

I was always on the other side there was a home cooked meal on the table every night when my wife got home. Now that my youngest moved back in I'm back to making supper every night. The girl I'm seeing is kind of mad because she doesn't get cooked for as often and yes she reads here.

Here is the recipe for the baked oatmeal

I skip the raisins/craisins and add 1/2 cup of chopped walnuts.

I cut it in 8 servings. Its good topped with yogurt and fruit or raisins/nuts or topped with some peanut butter.
