I wish I had a chicken for roasting in my fridge. It is rainy and miserable here today.

Yum, make sure to do the sweet potatoes and pecans to go with...they absorb all the pan juices and taste really yummy.

Got the sweet potatoes but have to leave out the pecans as SO has diverticulitus and can't eat nuts :cry:

I had a few extra chicken breasts left over from a bonus size package and didn't know what to do with them. STJ Spice to the rescue! I used the recipe printed on the Cruz Bay Grill Rub....Lime juice, zest, soy sauce, olive oil and the Grill Rub. Marinated them for hours then grilled. They were outstanding! Thanks Ruth.

yum! I have a pork roast in the oven with CBGR, OJ, mustard and some Blind Betty hot sauce, garlic, ginger. Smelling good so far!

Can you post the recipe for the Maple-bourbon glaze? That looks great and I'm getting tired of plain roasted chicken.

Looks yummy, Elizabeth! I guess we've all had chicken on the brain. Here is Saturday's meal--chicken stuffed with proscuitto and brie, breaded in parmesean crumbs, and served over pasta with an asparagus, white wine, chicken stock, parmesean sauce:

That was the healthy meal I served before all of the latest round of football snacks I have been testing. This time I made a bunch of different kinds of chicken wings, plus that horrific buffalo chicken dip which is so bad for you but makes men kiss your feet. I made everyone eat a big salad the next day to compensate!
